“Palakaw”, the most traditional fishing method of the Amis people, also represents an integral part of food and farming education here. It is an eco-friendly fishing technique that incorporates the wisdom of the indigenous people, where natural bamboo tubes and wood from the Taiwan crepe myrtle are used to build habitats for the fish, creating a comfortable environment to for fish and shrimp of all sizes. Fishermen only need to harvest what they need, thereby maintaining a good ecological balance. “We offer a variety of DIY courses in foraging, cooking, fishing, and handicrafts in this natural outdoor classroom.” The manpower required to design these experiences and run the restaurant provide local people with job opportunities, and a profit-sharing approach is used to create the incentive and opportunity for young people to return to their hometowns and earn a better income. To prevent pollution, the restaurant has designed a special oil interception tank to separate the grease and water, thereby protecting nearby water sources from contamination. This solution can serve as a model for other restaurants nearby.
